The Holiday Bikini – How to Make It

We present a simplified version of a beverage featured on a new menu. Designed as a party-sized premix that's loaded with tastes associated with Christmas time, which makes it excellent for hosting a festive gathering. Save the extra citrus syrup you can use for breakfast cocktails, puddings, or to make additional servings of bikinis.

Bikini

Makes enough for 10 people

For the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

To make the Drink (makes 850ml, to serve 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish

Directions

To prepare the Citrus Syrup: Combine the listed ingredients in a pot, heat until it reaches a gentle boil, stirring so the sugar melts. Next, remove from the heat allowing it to cool down entirely. Pour to a clean bottle, cap it and refrigerate it in the fridge, it can be stored for up to a month.

For the Cocktail Base: Mix every spirits and syrup into one sizeable container, allow it to infuse for one hour, then filter it preferably using a fine cloth, to ensure it's completely strained.

For serving: Pour 85ml of your batch mix into your mixing glass containing ice, and agitate lightly for about 60 seconds to cool it down. Pour to a frosted cocktail glass or equivalent, top with a few cranberries and complete it using a brief mist of mandarin oil above the glass.
